Eggs are a perfect source of protein. They are also a natural source of key nutrients including omega-3 fatty acids, vitamins A, E and B12 and antioxidants! Try out this delicious recipe as a snack or alternative for lunch:
- 6 eggs
- 4 spring onions, chopped finely
- 6 cherry tomatoes, halved
- 100g reduced fat feta cheese, diced
- 250g reduced fat ricotta
Preheat oven to 180c.
In a large mixing bowl add eggs and lightly whisk. Add spring onion, feta and ricotta. Stir well to combine.
Grease a muffin tray with butter or olive oil and spoon mixture into tray. Top each frittata with cherry tomato pieces.
Place in oven and cook until golden brown.
Allow to cool slightly before serving.
